Summer time pop-up menu by French chef Nicolas Isnard at SO/ Sotogrande –
SO/ Sotogrande SPA & Golf Resort, the five-star resort positioned in a privileged way of life, is collaborating with the French chef Nicolas Isnard (whose restaurant has a Michelin star). The gastronomic restaurant, Cortijo Santa María, is providing this revolutionary 5 course menu for the summer time, that can be accompanied by an unique wine pairing.
Visitors will embark on a culinary journey, reflecting Chef Isnard’s inspiration and experiences on his many travels, and his unfaltering deal with high quality, and respect for native produce and flavours.
This menu begins with a ravioli of oxtail with goat’s cheese emulsion and “ox coronary heart” tomato, adopted by mussels in sauce with sobrasada and contemporary mint. Then there’s a tuna loin ceviche, with avocado guacamole, sesame and combawa ‘lime’.
The menu continues with pork cheek with carrot, kumquat and coriander, and a dessert of roasted figs with sangria and orange foam with saffron.
